Seaweed Salad
Ingredients
3/4 oz dried wakame seaweed 3 tablespoons rice vinegar
Soak seaweed in warm water to cover, 5 minutes. Drain, and squeeze out excess water for the recipes. then cut into 1/2-inch-wide strips. Stir together vinegar, soy sauce, sesame oil, sugar, ginger, and garlic in a bowl until sugar is dissolved. Dice apple into 1/4-inch pieces and add to dressing with seaweed, scallions, and cilantro, tossing to combine well. Sprinkle salad with sesame seeds.

1 tablespoon olive oil1 teaspoon lemon juicesalt and pepper to taste1 small avocado, pitted, peeled and thinly sliced1 Fuji apple, peeled, cored and julienned1 ounce wakame, rehydrated, then drained and julienned
Whisk together the olive oil and lemon juice in a bowl. Season with salt and pepper. Add the avocado, apple and wakame. Gently toss. Serves 4.

Zucchini, cut in long slivers or julienne ½ Cup Chopped Red Peppers chopped 2 Tablespoons dulse flakes (dulse is a type of seaweed-sold in health food stores) ½ small garlic clove, finely chopped 1 Tablespoon lemon juice 2 Basil leaves, chopped ½ Avocado, chopped 4 or 5 green olives, chopped
Mix well. Serve on a bed of salad greens and top with sprouts.

6 medium tomatoes 1/2small cucumber2 sticks celery2 spring onoins1/2 cup fresh parsley1 tablespoon fresh mint1 clove garlic2 teaspoons kelp 1/2 cup sunflower seeds1 tablespoon lemon juice1 tablespoon olive oil (optional)celtic salt to taste (optional)makes 12
cut tomatoes in half scoop out centreadd tomato pulp to the other ingredientsfinely chop all ingredients ,mix well andfill tomato halves, great for a side dish or for finger food use cherry or small tomatoes
Celery and Walnut Salad
1 large bunch of celery2 red bell peppers3 or 4 tomatoes4 oz fresh walnuts
Grate the celery and peppers and place in bowl.Blend the tomatoes and walnuts and use as dressing

Fresh Berry Dessert
3 cups mix of hulled and quartered strawberries, blueberries, raspberries, and/or blackberries 4 egg yolks 1/3 cup sugar 1/4 cup fresh grapefruit juice Pinch kosher salt Grated grapefruit zest
In a large bowl, toss together the berries. Spoon the berries into serving dishes and set aside.
Meanwhile, combine the egg yolks, sugar, grapefruit juice, and salt in a large metal or glass bowl. Whisk vigorously until combined and the color is a pale yellow. Set the bowl over a saucepan of simmering water. Be very careful not to let the bottom of the bowl touch the simmering water. Using a whisk or an electric hand mixer, vigorously whisk the egg mixture until it has tripled in volume and is very thick and creamy, about 4 to 5 minutes. Spoon the warm custard over the berries. Top with a light sprinkle of grapefruit

Tasty healthy recipe for Spelt Bread
Metric Ingredients Imperial 1kg spelt flour 2Ib 8oz 25g fresh yeast 1oz 1tsp salt 1tsp 600ml warm water (35-40°) 1pt 1tbs vegetable oil 1tbs 15g sesame seeds ½oz Method 1. Place the flour in a large mixing bowl. 2. Blend the yeast into half the water and roughly mix into the flour. 3. Dissolve the salt in the remaining warm water and add to the flour. 4. Add the oil and mix the dough thoroughly for four minutes using a wooden spoon then cover and leave to rise for 1 hour. 5. Knead dough again then oil two 1Ib loaf tin & divide dough between them. 6. Sprinkle with sesame seeds, cover and leave to rise for 20 - 30 minutes. 7. Cook in an oven pre-heated to 220°C/425°F/Gas Mark 7 for 30 - 35 minutes.
