One of the most studied antioxidants in red wines is resveratrol, this is a compound found in the seeds and skins of grapes. White wine also contains resveratrol, but the seeds and skins are removed early in the process, therefore reducing the concentration of resveratrol in white wine.

The phenols in red wine include catechin, gallic acid, and epicatechin.

Polyphenols have been found to have antioxidant properties.

Resveratrol is a type of polyphenol called a phytoalexin, a class of compounds produced as part of a plant's defense system against disease.

It is produced in the plant in response to an invading fungus, stress, injury, infection, or ultraviolet irradiation.

Red wine contains high levels of resveratrol, as do grapes, raspberries, peanuts, and other plants.

FRENCH PARADOX

When the television news magazine "60 Minutes" reported in November, 1991, the phenomenon that has come to be known as the French Paradox, popular thinking of wine as medicine begin to emerge. The Paradox is this; typically, the diet of people in Southern France includes a very high proportion of cheese, butter, eggs, organ meats, and other fatty and cholesterol-laden foods. This diet would seem to promote heart disease, but the rate of heart disease in those countries was discovered to be much lower than in America; herein lies the paradox!

Researchers think that antioxidant wines; resveratrol, is so effective at improving health because of its potential to influence DNA reproduction.

As we age, our cells multiply, often without the exact same footprints as their predecessors. These reproduction "mistakes" are believed to be a natural part of the aging process that causes us to slowly deteriorate. Resveratrol in antioxidant wines may assist us in maintaining our original cell structure and patterns as they replicate, and this is a factor in promoting longevity.

Red wine is red because the juice ferments with the skins and seeds. Wine fermented with parts of the vines still in tact (woody parts, seeds, etc) are richer in resveratrol, producing the antioxidant wines. Red wines are richer in tannins; they ferment with the skins longer, creating higher resveratrol concentrations.

Unfortunately, white wine lacks high resveratrol concentrations due to the fact that the grape juice ferments without the skins (or other woody parts) and also lacks the tannins.

Non-alcoholic red wine and some grape juices have small concentrations of resveratrol; so they may also contribute to longevity, but not as much, because the fermentation process is key to releasing the resveratrol.

While red wine made from Muscadine and Pinot Noir grapes have the highest levels of resveratrol, other factors can also influence the antioxidant level.

Resveratrol concentrations appear higher in wines produced in cooler, wetter climates and from fruit that is free of pesticides, and antioxidant levels can vary from season to season, even in the same vineyard.
Less expensive red wine that is ready to consume; those that don't undergo an aging process also lack high resveratrol.

The filtering processes that these wines go through remove the bitter flavors, or tannins, which require aging; just like the resveratrol molecules. If you are looking to reap the health benefits of red wines, look for bottles that cost a bit more, and have had some degree of aging.

How much red wine a day?

Experts recommend one to two glasses of red wine per day. Whatever you end up drinking, keep in mind that resveratrol dissipates within 24 hours after opening a bottle, and that some wine makers are adding resveratrol supplements to their red wine to help them meet the FDA requirements it takes to get labeled with the heart-healthy symbol!

Does red wine protect against heart disease?

Many studies suggest that a moderate amount of red wine (one drink a day for women and two drinks a day for men) lowers the risk of heart attack for people in middle age by ~ 30 to 50 percent.

Other studies also indicate that antioxidant wines; red wine can raise HDL cholesterol (the Good cholesterol) and prevent LDL cholesterol (the Bad cholesterol) from forming, and may also help prevent blood clots and reduce blood vessel damage caused by fat. Another health benefit has been attributed to antioxidant wines; fighting off the common cold, also prevent herpes!
